This week’s Menu Plan Monday is filled with meals that are simple, taste incredible, and take the stress out of a busy week!

Menu Plan Monday is a list of six dinners and one dessert.

Get ready, ladies and gentlemen, because this week, I’m feeling fancy. I am going to show you just how easy it is to enjoy the finer things in life and stay within your budget. This week’s Menu Plan Monday is all about introducing delicious, exotic recipes into your kitchen that are also kid-friendly. I have tested my theories on the Lofthouse crew, and it is 100% approved!

What’s the most important meal of the day? Breakfast! Breakfast can be so much more than bacon and eggs or a warm bowl of oatmeal. When I have extra time on the weekends, and I’m feeling fancy, I’ll make my Monte Cristo Waffle Sandwiches. This will usually turn into a brunch, and the kids love it. This ultimate sweet and savory sandwich is always a hit!

For dinner, pasta is a great go-to, but this week it’s my special Chicken Mozzarella Pasta with Sun-Dried Tomatoes. This is the ultimate upgrade from spaghetti with red sauce.

For dessert, sometimes the most elegant things can be the most simple. My Summer Fruit Salad is a great and healthier way to end a delicious meal. Especially if that meal is extra hearty or heavy. This light fruit salad is fresh and packed with flavor.
