Menu Plan Monday is a collection of family favorite recipes from dinner to dessert.

This week, I am sharing a few recipes that are inspired by the beautiful country of Ireland. Being from Southern Utah has allowed me to live in some of the most incredible landscapes, but when I look at pictures of the coast of Ireland, I can’t wait to one day get on an airplane and visit. For Menu Plan Monday this week, I am delivering some of my most flavorful dishes that will transport your taste buds to the coastal cliffs of Ireland.

My Shepherd’s Pie recipe is so delicious. It’s packed with ground beef mixed with peas and carrots, and topped with homemade mashed potatoes and cheese. My kids beg me to make this all the time. I consider it to be one of my lucky recipes. 😉

If you’re looking for the pot of gold at the end of the rainbow, then look no further. This dessert is just what you’ve been waiting for! My Shamrock Shake (Copycat) is a creamy and minty milkshake that is reminiscent of one you might find at a popular fast-food chain. No need to go to the drive-thru because this sweet treat is made right at home. I hope that you have a happy St. Patrick’s Day!
