Now, the star of the show – the banana cake. Mashed bananas and butter, mixed with light brown sugar, egg, buttermilk, and vanilla extract. The dry ingredients are mixed in a separate bowl until it’s time for everything to come together.

Ingredients

Cinnamon Topping

  • 5 Tablespoons light brown sugar 
  • 1 Tablespoon ground cinnamon
  • 4 Tablespoons salted butter, melted and cooled 

Banana Cake

  • 2 large bananas, mashed 
  • 1/3 cup light brown sugar
  • 4 Tablespoons salted butter, melted and cooled
  • 1 large egg
  • 3/4 cup buttermilk  
  • 2 teaspoons vanilla extract 
  • 1 2/3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon

Icing

  • 1/2 cup powdered sugar 
  • 3 Tablespoons milk

Instructions

For The Cinnamon Topping

In a small bowl, stir the light brown sugar, cinnamon, and melted butter together until combined. Set aside. 

For The Banana Cake 

Preheat the oven to 350° F. Grease an 8×8-inch baking dish with nonstick spray. Set aside.

In a medium bowl, combine the mashed bananas, light brown sugar and cooled butter. Stir in egg, buttermilk, and vanilla extract. 

In a separate bowl, whisk the flour, baking powder, and cinnamon together until combined. Stir these dry ingredients into the wet ingredients just until combined. Don’t over mix. 

Spread the batter evenly into the prepared baking dish. Sprinkle the cinnamon topping all over the top of the batter. Using a butter knife, gently swirl the topping into an inch of the top of the batter. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out mostly clean. Remove from the oven and allow to cool for 30 minutes. 

For The Icing

Whisk the powdered sugar and milk together. Drizzle all over the top of the cake. Cut into squares and enjoy!

    I made this cake (doubled the recipe and made in a 9 by 13 inch pan) for a work meeting. My colleagues loved it! Also the whole house smelled terrific too while baking.

  2. Made the recipe and loved it. Could the banana be replaced with pumpkin for a fall themed version? If so how much pumpkin puree would I use? Would I have to change sugar amount due to bananas being sweeter that pumpkin? Thank you! Happy baking!

    1. Hi Nancy, to make this more fall themed, I would remove just one of the bananas and replace it with 1/2 cup of pumpkin puree. And in the cake batter ingredients, I would only use 1 teaspoon of ground cinnamon and add 1 teaspoon pumpkin pie spice. You can also add a tiny bit of nutmeg and ground clove to the cinnamon topping as well! If you try it let me know how it turns out 🙂
