Hi, friends! This week’s menu offers a delightful mix of sweet, savory, and refreshing dishes that capture the essence of summer. Menu Plan Monday is here to say that there’s still time to celebrate the season with vibrant, fresh, and delicious meals. These dishes are perfect for enjoying the final warm days of the year.
We went on a beautiful trip to Hawaii this year, and we’re all missing the beach, so my Hawaiian BBQ Chicken Pizza is on the menu! This pizza features a tangy BBQ sauce base, topped with juicy grilled chicken, sweet pineapple chunks, red onions, and a blend of mozzarella and cheddar cheese. It’s a deliciously unique twist on pizza that’s sure to be a hit with the whole family.
For our last picnic this summer, I’m making my Mandarin Orange and Spinach Pasta Salad. Tender pasta tossed with fresh spinach, juicy mandarin oranges, crunchy almonds, and light teriyaki dressing. These ingredients create a salad that’s as vibrant as it is delicious. It’s a standout side dish or light meal for a warm summer evening.
Treat yourself to S’mores Cookie Bars for dessert! These bars have all the lovely elements of s’mores, but without the campfire.
