That’s why we’re kicking off Menu Plan Monday with some easy-to-make meals! These will save you both time and effort. Check out this week’s summer-ready recipes below!

Celebrate Cinco De Mayo in style with my Slow Cooker Mexican Shredded Chicken. This chicken is for piling onto salads, tacos, and burritos. Add cilantro-lime rice and tomatillo dressing for the ultimate Tex-Mex inspired feast. If your family loves Cafe Rio as much as mine, you will be coming back to this recipe repeatedly. Trust me!

Nothing beats the smell of a pizza fresh out of the oven. My BBQ Chicken Bacon Pizza is another timeless classic that will leave you craving more. You likely have most of the ingredients in your kitchen. This recipe uses the Pioneer Woman’s pizza dough and once you try it, you will never go back. A highly rated dinner to serve for the whole family after some fun in the sun.

This week’s dessert is a guilty pleasure of mine. If you love both sweet and salty, My Gooey Chex Mix is the perfect snack.
