Menu Plan Monday #603
Close out summer on a high note with Menu Plan Monday. Light and easy breezy recipes that make mealtime something to look forward to!

Can you believe July is almost over? It’s been a month full of sunshine, memories, and good food. Before we officially kiss summer goodbye, I have rounded up a collection of unique seasonal favorites, perfect for soaking up every last bit of warm weather fun! From refreshing bites to easy family-friendly dinners, these dishes are made to be shared and savored together.
My Bacon and Queso Breakfast Tacos work for any time of day! These tacos are filled with fluffy scrambled eggs, crispy bacon, and seasoned potatoes all smothered in Queso cheese sauce. Whip them up in the morning for an amazing breakfast, serve for a quick lunch, or devour them for a delicious dinner on-the-go.
Take your pizza and pool party to the next level this summer with my Southwest Chicken Pizza! It starts with a creamy ranch dressing as the base, layered with chicken, black beans, salsa, and generous amounts of Colby-Jack cheese. The crispy tortilla strips add the perfect crunch, making it a dish that will be devoured within minutes. If you have a pizza oven, give it a good char around the edges for extra crisp and flavor!
If you grew up with a diner like Winger’s around you, you know how iconic Asphalt Pie is. But it’s even better homemade! My Asphalt Pie (Winger’s Copycat) is the perfect frozen mint treat with its gooey layers of crushed Oreos, caramel sauce, and ice cream, topped with whipped cream. BRB because I need to go make this myself right now! ☺️
