Mini BBQ Cheddar Meatloaves

My friend took my 3 kids for a sleepover last week. It was so nice! It’s pretty rare when Kale and I are kid-free, and when we are, we usually go out to eat, but since we were both exhausted, we chose to eat at home. I made us these super easy mini BBQ Cheddar Meatloaves! Miniature-sized meatloaves loaded with barbecue sauce and bits of cheddar cheese throughout… Seriously, amazing!

I served ours with a side of golden skillet potatoes (recipe coming soon) and a side of broccoli, and we were both in heaven. Let’s just say there was minimal talking during dinner because we were devouring every bite. It was so nice to enjoy a delicious dinner in our peaceful and quiet house.

Mini BBQ Cheddar Meatloaves are filled with cheddar cheese and smothered in tangy BBQ sauce. These are a delicious twist on the classic we all grew up eating!

Ingredients

  • 1 pound lean ground beef
  • 1 egg beaten
  • 1 Tablespoon Worcestershire sauce
  • 1/2 cup barbecue sauce divided use
  • 1/4 cup panko bread crumbs
  • salt and pepper to taste
  • 2 ounces cheddar cheese cut into cubes

Instructions

  • Preheat oven to 400° F. In a large bowl combine ground beef, egg, Worcestershire sauce, 1/4 cup barbecue sauce, panko bread crumbs, dash of salt and pepper, and cheddar cheese cubes. Mix until just combined.
  • Divide mixture into 4 equal pieces and shape into loaves. Place loaves on a foil-lined baking sheet. Spread remaining barbecue sauce over each loaf. Bake for 20 minutes or until no longer pink in the center. Serve and enjoy!

  4. Made these last night. I might have put too much cheese cubes in the mixture, but they still came out tasting amazing! I used A1 instead of Worcester sauce.They didn’t look as pretty as yours did, I”m thinking it’s because of the excess amount of I cheese I put in it, but they were a hit with the family. Will definitely make these again.

  5. I tend to mix mince beef with sausage mince for meat loaf. so this idea is different for me; will try it though. I also blend vegies into mine (a hangover from when kids were home!)

  6. The meatloaf looks great, but will add a little onion. We love meatloaf with onion. Also, green peppers may go in next time. Thanks!

  7. I make something very similar to these…You can double or triple the recipe and freeze them on a baking sheet. Once frozen, throw them in a zip-loc bag and use them as you need.

  8. I recently made these and they were/are delicious!! I actually tripled the recipe. Even my husband who isn’t a meatloaf fan liked them! I am actually going to make them again tonight. I served them with mashed potatoes and a veggie the 1st time.
