Packed with fluffy scrambled eggs, crispy hash browns, melted cheese, and fresh vegetables, they make a satisfying and well-balanced breakfast. Plus, they’re ideal for meal prep and busy mornings, so you can enjoy a delicious, homemade breakfast anytime.

Ingredients

  • 6 flour tortillas
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons butter
  • 1 lb frozen hash browns
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 cup, shredded Cheese (I used Colby & Monterey Jack)
  • 6 Eggs, beaten
  • 1/2 to 1 cup deli ham, cut into small cubes
  • salt & pepper, to taste
  • toppings of your choice:  sour cream, salsa, ketchup

Instructions

In a large non-stick skillet, heat the oil and butter over medium to medium-high heat. 

Add the diced onion and bell pepper. Stir and cook for about 5 minutes, or until soft. 

Stir in hash browns to mix in onion and bell pepper. Pack hash browns in an even layer in the skillet. Let cook (DON’T STIR) for 5 minutes. 

Flip hash browns onto their other side and pack back in. Let it cook for another 5-7 minutes. Again, don’t stir! Continue to turn every 5 minutes until they start to get golden-brown and crispy.

While your hash browns are crisping, in another small non-stick skillet, turn the heat to medium. Spray with cooking spray. 

Pour in beaten eggs and diced ham. Sprinkle with salt and pepper. Stir and cook until eggs are done. Remove from heat.

Once hash browns are crisp and golden, stir in the cheese. Stir until the cheese is melted, and then turn off the heat. Remove from the hot burner. 

On each tortilla, spread an even layer of the cheesy hash brown mixture. Top with a layer of eggs and ham. Wrap up in burrito style, and serve!

Store leftover breakfast burritos, place each breakfast burrito in an airtight container (or wrap in foil or plastic wrap), and refrigerate for up to 4 days. To freeze, wrap burritos and store in the freezer for up to 1 month. To reheat, remove any foil if frozen, then microwave for 1-2 minutes if refrigerated (cook for longer if frozen), flipping halfway through, until heated through. You can also reheat and crisp them in a skillet if desired.

  2. Love me some breakfast burritos FOR SURE! Last time we had a garage sale, we let the kiddos run the food portion of it, so for the morning hours, they sold muffins, coffee, and breakfast burritos. We made about 20 of them. They were sold out of those babies in 10 minutes flat, lol!

  5. I love breakfast for dinner too! My Mom used to do it for us as kids. My husband hates when I say I’m making pancakes for dinner. His stomach absolutely protest having breakfast food in the evening. It drives me nuts and then I tell him he has to just deal with it..lol. I lurve eggs! This sounds so good Holly!! (as always!!)
