That’s why I’m so excited to share this foolproof Easy Artisan Bread recipe with you! I’ll admit that when I first started using yeast, I found it a bit intimidating. But after lots of practice, and many loaves later, baking bread has become something I truly love, and I’m confident this recipe will get you hooked, too! From the fun, hands-on process to the cozy aroma that fills your kitchen, and of course, that warm, fresh out of the oven result, there’s just something magical about bread baking. It’s truly a labor of love! While this recipe doesn’t require a Dutch oven, I highly recommend using one if you want the crispiest crust. Don’t worry, if you don’t own a Dutch oven, well-oiled baking sheets work great too! I’ve included both methods in the instructions below.

EASY ARTISAN BREAD

This artisan bread recipe begins with the usual basics: all-purpose flour, instant yeast, and salt, but there’s one unexpected ingredient that takes the flavor to the next level: beer! Don’t worry, the loaf won’t taste like beer. Instead, it adds a rich, subtle depth that makes every slice memorable. Feel free to use whatever kind of beer you have on hand, and yes, even non-alcoholic options like O’Doul’s work well for this recipe! Not a fan of using beer in bread recipes? The only real effort this recipe requires is planning ahead, because the dough needs to rest for at least 8 hours, but the hands-on work takes just 5 minutes. I usually mix it in the morning, let it rise throughout the day, and bake it just before dinner. The result? Minimal effort, maximum flavor in the form of a crusty, golden loaf with a soft, airy interior that’s seriously bakery-worthy. I truly think it’s the best bread I’ve ever made. Artisan Bread

Ingredients

  • 3 ¼ cups all-purpose flour
  • 1/4 teaspoon instant yeast
  • 1 1/4 teaspoons course salt
  • 3/4 cup warm water 105 to 110 degrees F.
  • 3/4 cup (6 ounces) beer (regular or non-alcoholic beer) room temperature

Instructions

In a medium bowl, whisk the flour, yeast, and salt together. Add the water and beer. Stir together with a wooden spoon or spatula until a shaggy/sticky dough forms.

Cover the bowl with a dish towel. Allow the dough to sit at room temperature for at least 8 hours. If you want a denser bread, you can let it rise up to 24 hours.

Sprinkle 1 Tablespoon of flour on a clean countertop. Pour the dough out onto the flour. Fold the dough over a couple of times. Sprinkle the top with a pinch of flour.

Tear off a 2-foot sheet of plastic wrap. Spray the entire thing with cooking spray. Place the dough in the center of the greased plastic wrap, and then fold the plastic wrap to cover the dough entirely. Allow the dough to rest again for 30 minutes to rise.

Meanwhile, place a Dutch oven with the lid on (I use a Lodge Dutch Oven) in the oven. Turn the oven on to 440 degrees F. Let the oven heat with the Dutch oven inside for 30 minutes.

Note: If you don’t have a Dutch oven, you can use a baking sheet that has been oiled generously, but no need to warm it in the oven while preheating.

*Please be careful and use oven mitts so you don’t burn yourself! Remove the lid from the hot pot. Gently lift the dough over to the oven and drop it out of the plastic and into the hot pot. Cover with a lid and bake for 30 minutes.

If using oiled baking sheets, drop dough from the plastic and onto the baking sheet. Bake for 20 minutes. Serve bread warm and enjoy!

Let the bread cool completely before storing. Wrap tightly in plastic wrap or a resealable bag and keep at room temperature for up to 2 days, or refrigerate for up to 5 days (the crust may soften). For longer storage, freeze the loaf in plastic wrap and foil for up to 3 months.

To reheat, warm in a 350°F oven for 10–15 minutes until heated through and the crust is crisp. For a quick microwave option, wrap a slice in a damp paper towel and heat 15–20 seconds. To refresh a slightly stale loaf, mist lightly with water before reheating in the oven.
