  • 2 cans (15 ounces, each) *corn drained
  • 1/2 red bell pepper, remove seeds then dice
  • 1/2 Tablespoon freshly chopped jalapeno seeds, removed (can add more or less depending on heat tolerance)

  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 Tablespoons freshly chopped cilantro
  • 2 green onions, thinly sliced

*Can also use 4 cups of fresh or frozen corn. Thaw frozen corn first.

Combine all the ingredients in a medium-sized mixing bowl. Gently stir until everything is combined and evenly coated.
