Fiesta Corn Dip
Fiesta Corn Dip is a creamy and crunchy appetizer or side dish that is great for any dinner party. The flavor and texture of this dip is completely addicting!

Ingredients
2
cans (15 ounces, each)
*corn
drained
1/2
red bell pepper
remove seeds then dice
1/2
Tablespoon
freshly chopped jalapeno
seeds removed (can add more or less depending on heat tolerance)

chive and onion cream cheese
softened
1/4
cup
plain Greek yogurt
1/2
teaspoon
salt
1/4
teaspoon
black pepper
1/2
teaspoon
ground cumin
1/2
teaspoon
chili powder

Tablespoons
freshly chopped cilantro
2
green onions
thinly sliced
Instructions
Combine all the ingredients in a medium size mixing bowl. Gently stir until everything is combined and evenly coated.
Cover bowl with plastic wrap then store in the refrigerator for at least 3 hours or longer to incorporate all of the flavors.
Serve dip with your favorite tortilla chips and corn chips. You can also serve this dip over chicken or shrimp. Enjoy!
Notes
*Can also use 4 cups fresh or frozen corn. Thaw frozen corn first.
