Fiesta Corn Dip

Fiesta Corn Dip is a creamy and crunchy appetizer or side dish that is great for any dinner party. The flavor and texture of this dip is completely addicting!

Ingredients

  • 2 cans (15 ounces, each) *corn drained
  • 1/2 red bell pepper remove seeds then dice
  • 1/2 Tablespoon freshly chopped jalapeno seeds removed (can add more or less depending on heat tolerance)
  • 4 Tablespoons chive and onion cream cheese softened
  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 Tablespoons freshly chopped cilantro
  • 2 green onions thinly sliced

Instructions

  • Combine all the ingredients in a medium size mixing bowl. Gently stir until everything is combined and evenly coated.
  • Cover bowl with plastic wrap then store in the refrigerator for at least 3 hours or longer to incorporate all of the flavors.
  • Serve dip with your favorite tortilla chips and corn chips. You can also serve this dip over chicken or shrimp. Enjoy!

Notes

*Can also use 4 cups fresh or frozen corn. Thaw frozen corn first.
