The first time I baked these Halloween brownies, I couldn’t stop laughing at how cute and ghostly they looked, and my kids couldn’t stop eating them because they’re just that good. The combination is simple but irresistible: a rich, fudgy brownie topped with a fluffy marshmallow ghost, covered in creamy white frosting, and decorated with spooky faces.

Storage and Reheating
Store your Ghost Brownies in an airtight container in the refrigerator for 3 to 5 days to keep them fresh and the marshmallows soft. To reheat and enjoy them warm, microwave individual brownies for 10–15 seconds or heat a batch in a 300°F (150°C) oven for 5–7 minutes, loosely covered with foil to prevent the marshmallows from browning too quickly. These tips help your Halloween marshmallow ghost brownies taste freshly baked, even if you make them ahead of time.

Holly’s Tips for The Best Ghost Brownies:
- Any Brownie Batter Will Do: Boxed brownie mix works great for convenience, but homemade brownies add extra richness and fudgy texture. You can use any brownies you want! If you prefer homemade brownies, try my Chocolate Fudge Brownies as a base, or you can make your favorite box of brownie mix.
- Cool Completely Before Decorating: Make sure brownies are fully cooled so the marshmallows don’t melt and the frosting sets properly.
- Use Large Marshmallows: They create the perfect ghost shape and hold up well under frosting.
- Frosting Consistency Matters: Microwave frosting briefly and stir well; it should be smooth and pourable but not too runny so it stays on the marshmallow.
- Get Creative: Edible markers are quick and precise, while decorating gel gives a more playful, piped look. You can’t go wrong with either for crafting the eyes and mouth! Each ghost can have a unique expression; let kids join in for a fun, festive activity.
- Serve After Decorating: For the best texture and appearance, enjoy the brownies within a few hours of adding frosting and marshmallow ghosts.
Frequently Asked Questions:
Yes! Premade brownies work perfectly and save time—just cut them into squares and proceed with the marshmallow and frosting topping.
Microwave the frosting briefly (10–12 seconds) and stir well. It should be smooth and spreadable but thick enough to stay on the marshmallow.
You can make these Ghost Brownies gluten-free by using a gluten-free brownie mix or substituting the flour in a homemade recipe with a 1:1 gluten-free baking blend (add xanthan gum if needed). Most marshmallows, frosting, and edible markers or decorating gel are naturally gluten-free, but always double-check labels to be safe. With these swaps, you can enjoy delicious, fun, and spooky gluten-free Ghost Brownies that everyone will love.

These are so so cute! What a fantastic idea!
Do you think this would work with cupcakes on the bottom instead of brownies?
Leila, Yes! They would work on cupcakes. Cute idea! 🙂
What is your secret to keep the gel frosting from running on the ghost? I’ve tried refrigerator and freezer, as soon as they thaw, it runs.
I recommend using the Wilton or Betty Crocker brand of food gels. They are both great quality gels that are stiffer. I’ve noticed that the Great Value brand is really runny and doesn’t work.
i suggest shaking your bottle of gel before dispensing it . It usually mixes up the watery content with the solid . the trick is to shake the bottle of gel before decorating each ghost
So cute and eaSy!!!
