
It’s been a million years since I posted Menu Plan Monday, so I thought it was time to share one. We’ve been eating pretty clean at the Lofthouse casa this new year, so you’ll notice more healthier meals on this menu 🙂
We are feeling great and going strong on our healthy eating. I’ve lost 3 pounds so far! Woot woot! My hubby and I went on a 2 mile run on Saturday and I was shocked at how out of shape I am. I was huffing and puffing and thought I was gonna die. It was pathetic. It’s amazing how fast we get out of shape when we stop exercising.
I am getting back into full gear with exercising this week. My legs are already sore from Saturday so we’ll see how it goes…

OK, Holly! I’ve looked everywhere and can’t find a recipe for that delicious “lo-mein” looking dish on the Menu Plan Monday picture you posted. In the group of photos it’s on the top right. Is there a recipe….looks yummy!

Elisa, you will LOVE the lomein. I leave out the chicken and make it as a side dish for Holly’s baked sweet and sour chicken.
