Storage and Reheating

Allow the roasted potatoes to cool completely before storing in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months. To reheat, bake at 375°F for 10-15 minutes (refrigerated) or 20-25 minutes (frozen), or use an air fryer at 350°F for 5-7 minutes (refrigerated) or 10-12 minutes (frozen). You can microwave them for 1-2 minutes (refrigerated) or 3-4 minutes (frozen), though they’ll likely be softer. For the best crispy texture, I recommend re-crisping in the oven or air fryer before serving.

Holly’s Tips for The Best Savory Roasted Potatoes:

  • Use High-Quality Produce: Red-skinned or Yukon Gold potatoes roast beautifully, giving a crispy exterior and tender, fluffy interior.
  • Cut Evenly: Cube potatoes into uniform 1-inch pieces to ensure they cook evenly and develop a golden crust.
  • Coat Thoroughly: Toss potatoes well in the Dijon mustard, olive oil, garlic, and rosemary mixture so each piece is flavorful.
  • Bake In A Single Layer: Spreading potatoes out on the baking sheet prevents steaming and helps them get extra crispy.
  • For Even Crisping: Rotate or flip the roasted potatoes every 15 minutes to achieve golden, evenly roasted edges.
  • Adjust Seasoning As Needed: Fresh rosemary enhances flavor, but dried works well too; season generously for the best taste.
  • Make It Your Own: Swap herbs like rosemary for thyme or oregano, add smoked paprika or Parmesan, or try sweet potatoes or fingerlings to create a customized, flavorful roasted potato side dish.

  5. These were devoured right away. I love all of the ingredients so I had to try these. They are my new favorite potatoes. There was just enough sauce to coat all of the potatoes so it wasn’t too much. the edges were crispy but the potatoes were soft inside and seasoned perfectly. I’ll have to make a double batch next time so we can have leftovers. I loved being able to use dried rosemary too. So many recipes call for fresh herbs but these were perfect with the dried, not overpowering at all. A great find Holly!
