Twix Ice Cream Cake

Twix Ice Cream Cake starts with a shortbread cookie crust then layers of vanilla ice cream, chopped Twix bars, milk chocolate and caramel. This ice cream cake is delicious and so easy to make!

Ice Cream Cake with Twix Bars

Nothing helps beat the heat other than a frozen treat. Especially here in Southern Utah. You can usually find lots of ice cream in the Lofthouse freezer in one way or another. Since I like to indulge when making dessert, I help fulfill other sweet cravings too. Twix has always been one of my favorite candy bars. It’s so good they give you two! So, to combat the heat, and my extra sweet tooth craving, my Twix Ice Cream Cake helps solve two problems. Just like a Twix should.

TWIX ICE CREAM CAKE

Now you may be thinking that this dessert is just regular ice cream with the candy bar crushed and sprinkled on top. Oh no, my friends, it is so much more than that. This frozen cake starts with a shortbread cookie crust, just like the candy bar. Vanilla ice cream mixed with chopped Twix is spread over the crust, and then MORE chopped Twix go on top. Cover and place in the freezer for at least 6 hours or up to 3 months!

When ready to serve, drizzle the top with melted milk chocolate and caramel sauce! Cut into squares and serve. And I am telling you what, just like the original, you might have to have two pieces!

Ice Cream Cake with Twix Bars

INGREDIENTS

  • 16 shortbread cookies (I use the Keebler brand)
  • ¼ cup salted butter, melted
  • 5 cups vanilla ice cream, softened
  • 3 standard size TWIX Candy Bars, chopped and divided
  • ½ cup milk chocolate chips
  • ½ cup caramel topping

INSTRUCTIONS

Grease an 8×8-inch or 9×9-inch baking dish with non-stick spray. Set aside.

Place the shortbread cookies in a large Ziplock bag. Seal the bag shut. Crush the cookies into small crumbs with a rolling pin. Pour the cookie crumbs into the prepared pan. Pour melted butter all over the cookie crumbs and mix well. Press evenly into the pan. Freeze for 20 minutes.

Meanwhile, mix the softened vanilla ice cream with half of the chopped TWIX bars. Spread evenly over the frozen crust. Sprinkle the remaining chopped TWIX bars evenly over the top of cake. Cover the baking dish and freeze for at least 6 hours or overnight.

Once cake is frozen, and ready to serve, place the milk chocolate chips in a microwave-safe dish. Cook in 20 second increments until melted. Drizzle the milk chocolate evenly over the ice cream cake. Drizzle the caramel topping all over the cake. Slice into squares and serve!

ICE CREAM OPTIONS

I like to use traditional vanilla ice cream in this recipe to keep the flavor close to a Twix bar. If you want to keep costs low for this dessert, you can buy the value brand at your grocery store. If you have a brand of ice cream you love, then make sure to use it here. You can also get a little creative and try this recipe with chocolate ice cream, strawberry, or whatever flavor your heart desires!

SERVINGS

This recipe yields 9 servings. Believe me it’s so delicious you’ll contemplate having a second slice to keep things in line with having a Twix bar. If you have room, I say go for it! Otherwise, just keep in your freezer until you’re ready to enjoy again.
