Creamy Tomatillo Dressing

Teeming with Mexican flavors and a slight kick of spice, this flavorful dressing makes the ultimate household staple.

Ingredients

  • 2 small tomatillos (green Mexican husk tomatoes)
  • 1 small jalapeno pepper (ribs and seeds removed, then chopped)
  • 1/2 cup packed cilantro leaves (measure then chop)
  • 1 packet (1 ounce) Hidden Valley Ranch dry dressing mix
  • 1 cup mayo
  • 1 cup buttermilk
  • Tablespoons minced garlic
  • 1 teaspoon fresh lime juice
  • water as needed

Instructions

  • Remove husks from tomatillos. Chop into small pieces. Place in blender or food processor.
  • Add all the other remaining ingredients to the blender. Cover with lid. Blend until combined and smooth. (Add a little water if you'd like the dressing thinner.)
  • Pour dressing in a container and cover tightly with lid. Refrigerate at least 2 hours to chill before serving.

Notes

Yields: 2 cups dressing
Dressing stays good for up to 1 week covered tightly in the refrigerator.
