Italian Chicken and Stuffing Bake

Juicy chicken, basil pesto, mozzarella, and savory stuffing come together in this easy and delicious Italian-inspired bake!

Ingredients

  • 1 can (14 ounces) diced tomatoes undrained
  • 1 box (6 ounces) Stove Top Chicken Stuffing Mix
  • 1/3 cup water
  • 2 cloves garlic minced
  • 1 ½ lbs. boneless skinless chicken breasts cut into bite-size pieces
  • 1/3 cup basil pesto
  • 1 cup shredded Mozzarella cheese

Instructions

  • Preheat oven to 375° F. Grease a 9x13-inch baking dish with butter. Set aside.
  • In a large bowl, combine diced tomatoes, stuffing mix, water and garlic. Stir together until stuffing is moistened. Don't over mix.
  • Lay the chicken pieces in a single layer in the prepared baking pan. Spread the basil pesto over the top of chicken pieces. Sprinkle the cheese evenly over the chicken. Top evenly with the stuffing mixture.
  • Cover and bake for 30 minutes or until chicken is cooked through. Serve and enjoy!
