STEAK BITES
All you need to make the best steak bites is 1 ½ lbs of your favorite flat iron or top sirloin steak, cut into 1-inch pieces, with only 7 pantry ingredients to make the homemade steak marinade. That’s it! For best results, let the steak marinate overnight or chill in the fridge for 15 minutes. This quick steak bites recipe method involves cooking them in a skillet, but I will also break down how to cook them in the air fryer below if that’s your preferred method. They will cook relatively fast, usually around 4 minutes, so you will have a restaurant-style meal ready to go in minutes! Pair it with your favorite sides like Buttered Corn Rice, Dijon Roasted Asparagus, Parmesan Roasted Broccoli, and more.

Why You’ll Love This Simple Steak Bites Recipe:
- Quick Steak Recipe: Although the marinade takes time, these steak bites cook in just a few minutes, making them perfect for busy weeknights.
- Homemade Steak Marinade: The savory marinade made with soy sauce, Worcestershire sauce, garlic, and herbs infuses every bite with rich, bold flavor.
- Convenient & Versatile: Serve these steak bites as an appetizer, over rice, on salads, or alongside your favorite sides for a satisfying dinner.
- Meal-Prep-Friendly: Marinate the steak ahead of time and store leftovers easily. These are a great option for quick lunches and easy dinners.

Ingredients
- 1/2 cup low-sodium soy sauce
- 1/3 cup olive oil
- 1/4 cup Worcestershire sauce
- 1 teaspoon minced garlic
- 2 Tablespoons dried basil
- 1 Tablespoon dried parsley
- 1 teaspoon black pepper
- 1 ½ lbs. flat iron or top sirloin steak, cut into 1-inch pieces
Instructions
Place all ingredients, except the steak, in a large ziplock baggie. Stir with a spoon to combine.
Drop steak pieces in and seal shut. Shake gently to coat the steak entirely in the marinade. Place the bag in the refrigerator to marinate for 15 minutes or up to 24 hours. (The longer it marinates, the more flavorful and tender the steak will be.)
Heat a large skillet over medium-high heat. Heat the skillet until it’s very hot. Remove steak pieces from the marinade using a slotted spoon and place in a hot skillet. Discard marinade. Cook the steak according to your desired temperature. We like medium-well so I cooked ours for about 3 minutes.
Serve warm and enjoy!

Storage and Reheating
Store leftover steak bites in an airtight container in the refrigerator for up to 3 days. Allow the steak to cool to room temperature before storing, but do not leave it out for more than 2 hours for food safety. To reheat, warm the steak bites in a skillet over medium heat for a few minutes until heated through, or in the microwave in short 20-30 second intervals. To freeze, place steak bites can be frozen in a freezer-safe container for up to 2 months and let them thaw overnight in the refrigerator before reheating.
Holly’s Tips for The Best Steak Bites:
- Use High-Quality Steak: For the most tender steak bites, use flat iron or top sirloin steak. Trim any large pieces of fat and cut the steak into even 1-inch cubes to cook evenly.
- Let It Marinate Overnight: If you’re short on time, you can marinate the steak at least 30 minutes. But if you have more time, letting it sit up to 24 hours in the refrigerator will make the steak even more tender and flavorful.
- Cook Over Medium Heat In Skillet: A cast-iron skillet or heavy stainless-steel pan works best. Heat it over medium-high heat until very hot before adding the steak. The hot surface locks in juices and creates that delicious steakhouse-style crust.
- Avoid Overcooking: Steak bites cook quickly. Depending on size and preferred doneness, they usually need 2-4 minutes total. Turn them once halfway through cooking for even browning.
- Make It Your Own: For extra flavor, sprinkle with fresh parsley, a little cracked black pepper, or a small pat of butter right before serving. This simple step enhances both flavor and presentation.
Frequently Asked Questions:
Steak bites are best served fresh, but you can marinate the steak up to 24 hours in advance. Cooked steak bites can be stored in the refrigerator for 3-4 days and reheated in a skillet.
Yes. While marinating adds extra flavor, you can still cook steak bites without it. Season the steak cubes with salt, pepper, garlic powder, and herbs before searing in a hot skillet.
Absolutely. To cook Steak Bites in the air fryer, preheat it to 400°F and cook the marinated steak pieces for 6-8 minutes, shaking the basket halfway through cooking.
To make these steak bites gluten-free, replace traditional soy sauce with gluten-free soy sauce or tamari, since regular soy sauce often contains wheat. Also, check that your Worcestershire sauce is labeled gluten-free, as some brands include malt vinegar or other gluten-containing ingredients. The remaining ingredients are naturally gluten-free, but it’s still a good idea to check labels to avoid hidden gluten.

Happy 6th anniversary! I’ve only been following for a year but I love your blog! 🙂
Thanks so much, Aileen!
Made these tonight, so good!
Happy anniversary!! These look really good. I always have trouble with my steak being too tough. Any ideas – do I need to marinade them longer, cook them a shorter amount of time?
Thanks
These cook super fast, so keep that in mind depending on how you like your steak cooked. Also, the marinade helps to really tenderize the meat.
Do as Holly said, you probably cooked it too long, I usually do for just a couple minutes turning them take a thermometer and check what temp it is, usually I cook mine little rare or pink. you did it well done and it gets like shoe leather… GOOD LUCK AND GOD BLESS.
Make sure you are cutting it against the grain, cutting a steak incor will result in tough meat
Happy blogiversary!!! I’m so glad we met through blogging and became friends! I miss you girl <3
Can you use Filet Mignon instead?
Yes. I’m sure any good cut of steak would be amazing with this marinade!
Can you use any marinade with steak bites?
Yes, they should work with any marinade! 🙂
I made these tonight served over white rice. My family really enjoyed them. I used a pretty good cut of meat, I think that is key. Thanks!
I like the idea of being able to use a cheaper cut of meat to achieve a “good steak” taste and texture. I followed the recipe exactly but 2 Tablespoons of basil seemed way to much, for us anyway. I’ll greatly reduce it next time
This looks delicious!! My husband has an aversion to olive oil, what’s the best substitute?
Avocado oil has a high smoke point, canola, or peanut oil would work also.
Right, Avocado Oil you can get at Costco, it cost about $9.00 and change but it too is high heat, and very good, and it is not a gallon neither. It is a lesser amount.
Very easy to make. If you are sensitive to soy sauce or Westchester, it may not be for you. Myself, it was too strong.
These were delicious and so easy to make!
Can this recipe be doubled? I need to feed 7.
Yes, it can be easily doubled!
Hi Holly
Could I boil the marinade then thicken and add to bites as a sauce?
I love your recipes. Everyone I have tried has turned out yummy – spot on. Thank you so much for sharing!
Made these the other night, me and my family all agreed they were 5 stars outta 5!! Really awesome, definitely going in the dinner rotation.
I made these tonight in the crockpot…so good! Thank you for sharing
How long in the crockpot? Were they tender?
What temp and how long in the crockpot ?
Low or high? How long?
Hi! I was wondering if you add any oil to the skillet before cooking these? I can’t wait to try them!
I used these for a low-carb stir fry tonight, and they were AWESOME. I marinated the beef tips (I used stew beef) overnight in a ziploc bag, then baked them until nearly done in the oven. Then I drained the liquid off, tossed the beef tips into a pot with a bagged stir fry veggie mix (bok choi and other fresh veggies, not frozen), added a little sesame oil and tossed until the veggies were *just* wilted. No other seasoning needed and the normally tough stew beef was SO tender.
Bonus: I had enough beef tips left over for another meal tomorrow.
Does it have to be bites or can I cook whole?
I’m in LOVE with this recipe!!! Tried it tonight with the flat iron steak option and it’s an instant new family favorite!
I can’t wait to try it…I will let you know how yummy they are..ty for the record
Oops Ty for sharing your recipes
A little too “herby” for my families liking. Are 2 tablespoons dried basil correct? Maybe 2 teaspoons would not knock us out like they did tonight for our dinner. I used flat iron steaks and they were tender, but again way too many herbs.
Yes, it’s correct. But you could always use less if that’s your taste preference 🙂
I put in 1 tbsp not 2 and less pepper as well because my kids are sensitive to so much pepper.
I made this tonight I think the cut of meat was a bit tough, also a bit to salty, any ideas on what to use to not make it so salty and a better cut of meat?
Thanks
Lynn
Made this last night, served with some crispy tater tots. Was delish! Will definitely make again.
Do you happen to know the nutrition information on the steak bites? I’m trying the keto diet and trying to account for everything I eat! These look great!
This looks very low carb. I’d substitute soy sauce for liquid aminos. Will be trying this recipe next day or two
I keep meaning to come back and comment on this recipe and I finally just made myself do it. This recipe is phenomenal! My fiancé calls it the best thing he’s ever gotten from the internet. We’ve put it on steak bites, full steak, pork chops, salmon, and chicken. It’s been absolutely wonderful every single time. I don’t even have to ask him if he wants me to marinate things in anything else. This is all we’re using for anything. I don’t even have to look at the recipe anymore. Thanks so much for sharing!!!
What do you serve with these?
AMAZING. SO SO GOOD AND SO FAST AND SO EASY!!
Just in case anyone like myself is always looking for recipes for wild game, I made this tonight with venison instead of beef and it turned out PERFECT!!
I made this for my family tonight for supper I followed the recipe per Batum it turned out very delicious thank you for the wonderful recipe you are really making me look good in the kitchen thank you
🙂 🙂
Love these steak bites! So easy to make and packed with flavor! I follow recipe exactly and usually serve with rice and fresh veggies.
Great recipe! I have made it several times and always a hit. I shared it on my own blog The Gypsy Professional and gave you credit.
Made these last night and my family devoured them! I suggest the full 24hr marinade so the meat is tender. Will definitely be making this over and over again!
These are the best. I first found the recipe in 2017 just had to come back and print it again because my original was hosed! lol These are simply incredible and everyone I’ve made them for LOVES them. If I’d lost my recipe, my family would not be happy at all. One of our all time favorites. Thank you !
RIGHT ON HOLLY. People just don’t read properly, I always read a recipe two times and make sure I have it right.
Do you think these could be marinated and then put into single serving size bags and frozen? Cooking for one over here.
I definitely think you could freeze these after marinating them!
Can you Substitute fresh basil and fresh parsley instead of dried??
Yes of course!
Best steak marinade!
Happy New Year! Making steak bites tonight..do I need to put oil in pan to fry or is there enough in bites? Thanks
Happy New Year, Barbara! No oil needed. The steak bites will have enough oil on them from the marinade. Enjoy!
If you’re debating to make this do it! It’s so good you won’t need sauce. We’ve made it in a pan cut in small pieces and also left it WHOLE and grilled. It’s Amazing both ways. Thank you for sharing your recipe❤️
LOVE this marinade! I serve it with a roasted sweet potato and broccoli recipe over rice.
I can See how you made it 6+ years, congratulations! This recipe is super simple to make, and you made it so yummy my toughest critic has made this her new favorite! Thank you!!
I had thinner pieces but this was still excellent! Very flavorful! Thank you for sharing.
This is one of the best recipes I have found!! I tweaked it a bit (due to time), but I just threw everything in the crockpot on low for just a few hours. Outstanding!
Very good. Serving with the horseradish sauce is key. Use low sodium and less basil.
I made the recipe but I toned down the basil and added some thyme instead. I also added a large splash of red wine vinegar. I think next time I make it I would add red pepper flakes to the marinade because for me it needed a bit of zip. Also i have a soy allergy so I subbed coconut aminos.
This was delicious. My whole family enjoyed it.
These were really easy and a huge hit!
Wow!! Thank you for the recipe, I made these tonight and they’re perfect as is!
I’ve been following you maybe for all 6 years.. ha! I love your recipes and quite a few have been in my regular rotation now. The 3 packet roast and crock pot italian chicken are just a few favorites!
These turned out Amazing! One of the easiest recipes I’ve made and by far the most flavorful. Thank you!
I just wanted to say thank you for this recipe! As dramatic as it sounds, it truly has been a life changer for me!! It’s our go-to recipe any time we make steak for the week, and it’s such a delicious way to break up our weekly meals! I always recommend this recipe and your others to all my friends and family ❤️ Thank you so much, Holly!
